South of the Border Burrito; Meatless Monday vegan recipe and a giveaway!!

My family is a connoisseur of vegetarian food. Fish and chicken is cooked only occasionally. I love fish and cannot resist grilled chicken. However, my husband and kids prefer vegetarian food over non-vegetarian. Needless to say, I therefore end up cooking more vegetarian dishes than non-vegetarian. Truth be told, personally for me, cooking a vegetarian dish is much easier and quicker than non-vegetarian.



I am a huge supporter of the Meatless Monday Movement. I often feel that people in the West have this misconception that a meal is incomplete without some form of animal protein and that animal protein is essential for normal growth and development.  Indian cuisine proves that this is a myth. Many Indians are vegetarian and lead a healthy, whole and successful life. 

Coming back to the recipe on hand.. when Taylor from Meatless Monday told me about an opportunity to work with Kristi Funk by trying one of her healthy recipes that support her  latest book filled with tons of information regarding breast cancer, how to prevent it with a healthy lifestyle, I was all for it! I am always on the quest for cooking in a healthier manner. I grew up in a family where 1 liter of oil would last the entire month. This recipe of Kristi�s uses no oil at all! I had to try that. I have to tell you, it came out delicious!! 




For those of you who are not familiar with Dr. Kristi Funk, she is a leading board-certified breast cancer surgeon and specialist in comprehensive wellness, including nutrition, fitness, and stress management. Best known as the breast surgeon for Angelina Jolie and Sheryl Crow, Dr. Funk has compiled her accessible and powerful strategies for reducing cancer risk and achieving optimal overall health into a much-anticipated book, Breasts: The Owner�s Manual, which came on shelves May 1, 2018.



Dr. Funk embraces meat reduction for healthy living. She personally provided a selection of delicious Meatless Monday recipes exclusively for us to try. One of them was the South of the Border Burrito. I tried it and everyone at home loved it! It was quick and easy. I would have never imagined that cooking without oil would taste so good! I made some minor changes to it due to lack of some ingredients. I didn�t have cilantro or avocado and therefore skipped it. I used chopped lettuce instead. Instead of Braggs amino acids I used tamari sauce. I have described the recipe verbatim as provided by her.

Serves 3-4

Ingredients:

1 package (8 oz.) organic firm or extra firm, well drained tofu (prep technique below)
1 onion
1 large green pepper
1 large red pepper
2 handfuls chopped spinach
2 tomatoes
1 tsp turmeric
2 T Bragg Amino acids (or tamari)
Veggie broth to broth saut�
Salsa
1 Avocado
Cilantro to taste
Whole grain tortillas

Directions:

Heat pan with a tiny bit of broth just covering the bottom of the pan. Once the broth is simmering, add the chopped onions, tomatoes and peppers. Saut� until they start to get soft (about 6-8 minutes). Keep adding broth by the tablespoon when pan is gets too dry.

Crumble tofu (I use my hands), add turmeric and Bragg Amino acids and saut� until everything is starting to brown just a bit.

Add spinach, turn OFF heat, and toss for a minute or so.

Taste and decide if you want to add a little more Bragg�s.

Heat tortilla until soft and fill with mixture. Add salsa, cilantro and avocado and wrap into a burrito.

Tip: Draining tofu completely is important. Cut the tofu block in half and press in clean kitchen towels, then wrap in a dry towel and place under a heavy pan (or a stack of books!). Leave for at least 20 minutes and change out towels if they get too saturated. Better yet, buy a tofu press... such a great gadget to have!

OMG, where has the month gone?! I can't believe May is next week. OK, sorry but I think I'm starting to sound like a broken record. This month has been good to me in life and business. Things are crazier than ever, but I end every day like - Today was a good day.

Say hello to the best cauliflower pizza crust I've ever had -- Califlour Foods. Earlier this month I scored the starter park during one of their sales because you know I love testing new foods and reporting back to y'all. I passed my CF Level 1 Certification! Wahoo, now I can start helping around at the gym.

I started working on my Nutrition Certificate! It will be a few months before I'm finished, but expect some serious food knowledge bombs coming your way! Final Weigh-In TONIGHT

It is already here! The final weigh-in for the 2018 Way to a Better Life Contest. 

The final weigh-in will be held at the Gene Fullmer Recreation Center (8015 S. 2200 W.) from 5:30pm-7:30pm. You can come by anytime during the final weigh-in to complete your post-assessment testing and record your final weight and points for the contest.

What to expect: 
*Anticipate the post-assessments to take about 30-45 min. to complete.
When you arrive at Gene Fullmer you will go through six stations:
1- Check-in - Pick up your assessment form
2- Weight - Weigh-In for the your official final weight
3- Body Composition - Body Fat percentage measured
4- Waist Circumference Measurement
5- After Photo
6- Blood Pressure and Cholesterol Testing - *This station will most likely take the longest so please be patient.

In the Open: 18.5 and Final Thoughts

You guys! We can't forget about the last open workout! All the thrusters and chest to bars. Yeah, I know it ended a month ago, but life happened. What can I say! Let's dive right into things.

THE WORKOUT

This was a repeat of 11.6

Complete as many reps as possible in 7 minutes of:
3 thrusters / 3 chest-to-bar pull-ups
6 thrusters / 6 chest-to-bar pull-ups
9 thrusters / 9 chest-to-bar pull-ups
12 thrusters / 12 chest-to-bar pull-ups
15 thrusters / 15 chest-to-bar pull-ups
18 thrusters / 18 chest-to-bar pull-ups

If you complete the round of 18, go on to 21. If you complete 21, go on to 24, etc.

INITIAL THOUGHTS
Honestly, I think we all knew thrusters and chest to bars were coming so I wasn't really surprised. I was surprised that Castro gave the CrossFit community a choice of 3 to vote on prior to the announcement. I knew I would have to break up the thrusters and hammer out the chest to bars.

MY PERFORMANCE
Surprisingly well. I hit 91 reps. I broke up the reps early kept the transition quick and never stopped moving. The thrusters never got hard, but those linked chest to bars fell apart at around 15. I actually redid this workout with a different rep scheme and got the same score... I was not pleased.

FINAL THOUGHTS
Overall, I'm happy with my performance. This is a workout that would have previously crushed me and it ended up being my second best finish during the 2018 open. It just goes to show how much I've improved in the last year.

OVERALL THOUGHTS ON THE 2018 OPEN

Now that the open is over I can reflect on my overall performance. It was 10 times better than previous years. I'm actually really happy with my overall finish -- 3,062 out of 30,915 worldwide! My takeaway... I have a lot of room for improvement. A few goals include bar cycling mid/heavy loads, overall strength, and butterfly pull-ups.

WHAT'S NEXT...
Fingers crossed I pass my CF level 1 cert. and then start working on my nutrition cert.... because I have SO much time. Oh, and keep training.
